July 4th Appetizers That Will Steal the Show

When we think of the fourth of July, we think of fireworks, family time, and most of all, good food and drink. Whether you’re cooking for the family or sharing the day with friends, we’ve got the perfect wine-and-appetizer pairings for your celebration.



Nectarine, Proscuitto, and Goat Cheese Crostini – pair with Weed Cellars Prosecco


Weed Cellars’ creamy Prosecco is the perfect accompaniment for this appetizer; its stone fruit flavors perfectly complement the fresh nectarine without overwhelming the delicate flavors of the proscuitto.

Servings: 8
Total Time: 20 minutes


Ingredients:
8 slices of a French baguette
2 Tablespoons extra virgin olive oil
3 oz thinly sliced proscuitto
3 oz goat cheese
2 fresh nectarines, sliced into 16 pieces

Directions:
Preheat the oven to 400 °F. Prepare a rimmed baking sheet.

Brush both sides of each baguette with olive oil and lay them on the baking sheet. Bake for 6-8 minutes and let cool.

Spread the goat cheese evenly atop each baguette slice. Place a piece of folded proscuitto onto each baguette.

Finally, top each with two slices of fresh nectarine and serve.



Mini Burger Bites – pair with Weed Cellars Pinot Noir

Total Time: 1 hour

Ingredients for Burger Bites:
6 oz spinach leaves
8 oz fresh bocconcini (small mozzarella balls), halved
10 oz cherry tomatoes
20 meatballs
20 toothpicks

Ingredients for the meatballs:
I Tablespoon olive oil
¾ cup breadcrumbs
¾ lb ground beef
½ cup mushrooms
¼ onion, finely chopped
1 teaspoon black pepper
1 teaspoon garlic powder
2 teaspoons salt
½ cup Parmesan cheese
1 egg

Directions:
First, make the meatballs. Preheat the oven to 325 °F. Line a baking sheet with aluminum foil and set aside.

In a large pan, heat olive oil over medium heat. Toss in the onions and mushrooms and stir until cooked through.

Place the ground beef, black pepper, garlic powder, salt, egg, Parmesan, and breadcrumbs in a large bowl. Knead the mixture together by hand to combine the ingredients. Add in the onion and mushroom mixture, and massage until all ingredients are thoroughly mixed.

Shape the meatballs into round balls that are about 1 inch in diameter, making 20 meatballs in total. Place them on the baking sheet.

Bake for 20 minutes, until cooked through.

Using a toothpick as a skewer, slide in half a bocconcino, one cherry tomato, a few leaves of spinach, and one meatball. Do this with all 20 toothpicks to create 20 Mini Burger Bites.



Air Fryer Cheesy Pizza Wraps – pair with Weed Cellars Cabernet Sauvignon

The elevated tannins and racy acidity in Weed Cellars Cabernet Sauvignon will seemingly “cut through” the richness of the mozzarella and the fattiness of the pepperoni, serving to refresh your palate between bites.

Servings: 9 pizza wraps
Total Time: 45 minutes

Ingredients:
8 oz mozzarella log, thinly sliced
¼ cup rated Parmesan cheese
4 oz tomato sauce
1 teaspoon garlic powder
1 teaspoon black pepper
½ teaspoon red pepper flakes
16 oz pizza dough
3 oz sliced pepperoni

Directions:
Preheat the oven to 400 °F. On a lightly floured surface, roll the pizza dough out into a flat rectangle with a thickness of about one third of an inch.

Spread the tomato sauce over the entire rectangle. Cover ¾ of the rectangle, lengthwise, with slices of mozzarella. Sprinkle the Parmesan atop the slices of mozzarella. Place slices of pepperoni atop the grated Parmesan. Only ¾ of the rectangular dough is covered with mozzarella, Parmesan, and pepperoni.

Lengthwise, roll the dough from top to bottom, keeping all the ingredients tightly wrapped within the dough. Transfer your pizza log onto a baking sheet and let stand in the refrigerator for 15 minutes.

Remove the pizza log from the refrigerator and slice it into 1-inch wraps. Brush all sides of each wrap with olive oil and place them into the Air Fryer. Air fry them for 8 minutes on one side, turn the pizza wraps, and air fry for another 7 minutes on the other. Serve warm.
